Makes 1 package (about 3 T) of mix

This recipe can be increased to make more packages.

 

2 T. Instant Bacon Bits

1 T. Instant Minced Onion

1 tsp. Instant Beef Bouillon

1/8 tsp. Minced Garlic

....Combine all ingredients in a small bowl; blend well

........Spoon mixture onto a 6-inch square of aluminum foil and fold to make airtight

Makes 1 serving (3 Tablespoons)

 

1-1/2 tsp. Grated Lemon Peel

1 tsp. Oregano

1/8 tsp. Instant Minced Garlic

1/2 tsp. Pepper

2 T. Graded Parmesan Cheese

....Combine all ingredients in a small bowl; stir until well blended

........Spoon mixture onto a square of aluminum foil, and fold to make airtight packet

4 tsp. Cocoa Powder

2-1/2 tsp. Ground Coriander

2-1/2 tsp. Ground Cumin

1-1/2 tsp. Garlic Powder

1/2 tsp. Sugar

1 tsp. Dried Oregano

1/2 tsp. Cayenne Pepper

....Combine all ingredients in a small bowl and blend well

........Spoon the mixture into a glass jar and label as Chili Seasoning Mix

TO MAKE: The CHILI

(Makes 10 servings, about 2-1/2 quarts)

....Brown in a medium skillet over medium-high heat....Drain

2 lb. Lean Ground Beef

2 tsp. Canola Oil

........ADD....Cook until tender

1 medium Onion, chopped

........Stir in

15 oz. can Kidney Beans

28 oz. can Diced Tomatoes, un-drained

........Puree in a blender....Add

Reduce heat and simmer 30-40 minutes uncovered, stirring occasionally

........Run under hot water to remove any excess grease

1-1/2 lb. CHICKEN, ground

....Return onion to the skillet and stir in garlic

1 T. GARLIC, minced

2 C. ZUCCHINI, grated * (optional)

....Sprinkle over the top and stir in well
