American Chop Suey

....Cook over medium heat until onion browns

3 medium ONIONS, chopped

2 T. OLIVE OIL

 

....ADD half way through cooking

1 T. GARLIC, minced

 

....Scramble fry....Drain....ADD to above

1 lb. GROUND BEEF

 

....ADD undiluted

2 cans TOMATO Soup *

 

....ADD to taste

WORCESTERSHIRE Sauce

TABASCO

 

....Simmer above while you cook

2 C. ELBOW MACARONI

 

Stir all together and serve

 

Has more flavor if made the day before serving

 

* Sometimes I replace one Tomato Soup with one Cream of Mushroom Soup

Cabbage Rolls (Lazy)

....Scramble fry

......Remove from skillet and drain

1 lb. Ground BEEF

 

....Brown in the same skillet

1 medium ONION, chopped

 

....Stir into the cooked onions

The cooked Ground Beef

1 C. cooked RICE

1 can TOMATO Soup

1 can WATER

1 medium head CABBAGE, chopped

 

BAKE in an uncovered greased 2 qt. casserole

For about 1 hour at 350 degrees F

 

Sprinkle top of casserole with....And bake 1/2 hour longer

1 C. Grated LONGHORN CHEESE

Cabbage Rolls

....Cook in boiling salted water a few minutes to soften

......Drain on paper towel

8 CABBAGE LEAVES

 

....Combine with hands and divide the meat mixture among the cabbage leaves

......Roll and secure the stuffed leaves with a toothpick

1 lb. Ground BEEF

1 C. cooked RICE

1/4 C. Chopped ONION

1 EGG, beaten

1/2 tsp. SALT

1/4 tsp. PEPPER

2 T. of TOMATO Soup

 

....Place rolls in a skillet and pour the remaining CAN of SOUP over

......Cover and cook over low heat about 40 minutes

........Stir often, spooning sauce over the rolls

Cincinnati Chili

Serves 8

 

....ADD ground beef to water in 4 quart pot

......Stir until beef separates to a very fine texture

........Boil slowly for half an hour

1 qt. WATER

2 lb. Ground BEEF

 

....ADD all other ingredients

......Stir to blend, bringing to a boil

2 medium ONIONS, grated fine

1-1/2 tsp. SALT

2 - 8 oz. cans TOMATO Sauce

1/4 tsp. Ground ALLSPICE

1 tsp. CAYENNE Pepper

1 tsp. Ground CUMIN

4 T. CHILI Powder

1-1/2 T. Minced Fresh GARLIC

1/2 oz. Unsweetened CHOCOLATE

2 T. White VINEGAR

1 Large BAY LEAF, whole

1/4 tsp. Ground CLOVES

2 tsp. WORCESTERSHIRE Sauce

1/2 tsp. Ground CINNAMON

 

....Reduce heat and simmer, uncovered, for about three hours

......The last hour, pot may be covered after desired consistency is reached

 

Chili should be refrigerated overnight so that fat can be lifted from

the top before reheating and serving

 

Serve with macaroni or spaghetti and grated cheese

or with kidney beans

or with beans and chopped onions

....Heat in a large canner

3 T. OLIVE OIL

......Saute

4 medium ONION, chopped

........ADD when onions are just about done

2 Cloves GARLIC, minced

 

....Scramble fry 1 lb. at a time

......Drain and add to above

6 lbs. Ground BEEF

 

....ADD....Stir in and cover....Simmer 45 minutes

1/4 C. WORCESTERSHIRE Sauce

3 T. Ground CUMIN

2 cans TOMATO SOUP

4 T. PAPRIKA

1 can TOMATO Sauce

2 C. WATER

1 tsp. Crushed RED PEPPER

4 T. CHILI Powder

4 -16oz. cans Fancy Stewed TOMATOES

2 T. SUGAR

 

....ADD....Stir in and cover....Simmer another 45 minutes

8-15oz. cans KIDNEY BEANS *

 

* HINT: If I have home made baked beans on hand I use 16 cups and

increase the water to 3 cups

....Break into large chunks

......Stir-fry 3 minutes in a wok or until no longer pink

........Remove from wok to add back later

1 lb. Ground BEEF

 

....ADD to the wok and cook over high heat 3 minutes

1 can CHICKEN Broth

1 pkg. Frozen VEGETABLES

4 lg. MUSHROOMS, sliced

1 med. ONIONS, sliced

 

Return BEEF to wok

 

....Mix together....ADD to wok

......Bring to a boil....Cook 1 minute

3 T. WORCESTERSHIRE Sauce

1 T. CORNSTARCH

1 med. TOMATO, coarsely chopped

2 T. JALAPENO PEPPER, slices

2 tsp. CHILI POWDER

 

....Prepare as per box direction

2 – 8 oz. Jiffy CORN MUFFIN Mix

 

Oval 2 qt. Greased Casserole Dish

....Spoon muffin batter around the edges of casserole dish

......Carefully spoon meat mixture into the center of dish

........Keeping batter toward outside edge of dish

 

BAKE 375 degrees F for 25 minutes

1/4 C. ONION, chopped

1/4 C. BREAD CRUMBS

2 EGGS, slightly beaten

1/2 tsp. SALT

Dash of PEPPER

1 T. WORCESTERSHIRE Sauce

 

....Spread over top

Reserved 1/2 cup of SOUP MIX

 

BAKE at 375 degrees F for 1 hour and 15 minutes

....In a separate skillet scramble fry

....ADD....Simmer at least 20 minutes

......While you make your mashed potatoes

1 can TOMATO SOUP

Dash of TABASCO

Dash of WORCESTERSHIRE Sauce

 

....Make into mashed potatoes

6 medium POTATOES

 

....Put meat mixture into the bottom of a 3 qt. Buttered Casserole

......Spread potatoes over the top sealing the edges

 

BAKE in 350 degrees F oven 15 minutes....UNCOVERED

1/2 C. uncooked WHITE RICE

1/2 C. Minced ONION

1 tsp. GARLIC Powder

 

Place meatballs in a greased 13x9-inch pan

 

....Make one of the following sauces

.....Whisking together until smooth

......Then pour over meatballs in the pan

.......Seal pan tightly with foil

2-1/2 C. TOMATO JUICE

1 can Cream of MUSHROOM Soup

......ADD and cook by breaking into small pieces

1 lb. Ground BEEF

.......Stir in

1 C. of a can TOMATO Soup

1/2 tsp. SALT

1 C. Cooked White RICE

Dash PEPPER

2 tsp. WORCESTERSHIRE Sauce

3 dashes TABASCO Sauce

 

....Spoon meat mixture into your peppers

......Arrange in a 1-1/2 qt. greased casserole

 

BAKE at 350 degrees F for 25 minutes

 

....Top the peppers with soup

......Place cheese on each in a cross pattern

The remaining SOUP

2 slices AMERICAN CHEESE, cut into 4 strips

......Return to oven

 

BAKE at 375 degrees F until cheese melts
